The short version
The Ultim Champion and Ultim Elite share the same springs, mat and protective edge. They differ in frame tubing and in the warranty on the padding, which is 2 years on the Champion and 5 on the Elite. The Pro Bouncer is a step beyond both: stronger springs, an edge twice as thick, and a larger maximum size.
